I baked these in the oven and the tortillas came out kind of crispy but the next day I reheated them in the microwave for lunch and they were delicious and soft. Next time I think I will just do them in the microwave.

I would prefer salsa (medium or hot) on top instead of the spaghetti sauce
Rob suggested adding olives, and rice

I loved these! I just heated them up in the mircrowave and took 1 to work the next day! We also did Salsa instead of the spaghetti sauce! Olives would be great! good idea Rob.

Silly question: If I took these out of the fridge to defrost, and then put them back in the freezer because we didn't end up needing dinner that night, do you think they are still okay to eat??

nat i bet they are - but it sounds like the micro is the way to go with them...

I think they'll be okay. Try one and if its' bad, go to Costa Vida

I guess I should've frozen this one when I got home. No room in the freezer... I am not Betty Crocker... who knew you could freeze glass??? Anyway, the garbage is the only thing that got to partake of this one:(

everybody liked this tonight, even though we struggled a bit with the cooking. micro-ed them from frozen, they got soggy, except the top that wasn't folded in = crispy. i think we should do these again, fold them like a frozen micro burrito. was there spaghetti sauce? i didn't use it. we had it with southwest rice, it was a good addition.

I put them in the fridge last night and microwaved them for 1 min. and 45 sec. and they were great. We did cheese and salsa on the top.
I was the one to put them together and the ones at the end were folded over better. I'm not great at making Mexican food. Keith liked them, but said chicken would be better.

They were okay after the fridge to freezer trip! We topped them with the spaghetti sauce (which I have to admit, sounded fishy), and cheese, and microed them. I don't know how long they finally cooked for, but once we got them done, they were good!
